Stuffed Meatloaf

Ingredients:

Meatloaf:

1 ½ pound lean beef steak mince 5% fat

1 egg

1 cup dried breadcrumbs

1 tsp mustard

1 tsp dried parsley

1 tsp dried oregano

1 tsp garlic powder

1 tbsp olive oil

Stuffing:

8 slices of mozzarella

4 slices of ham

3 eggs

1 carrot

½ red pepper

1 cup spinach

Instructions:

1. Preheat oven to 375°F.

2. In a large bowl beat the egg and add meat mince, ¾ cup breadcrumbs, mustard, parsley, oregano, and garlic powder. Knead until combined.

3. Place half of the meat into the bottom of a lightly greased baking pan.

4. For the stuffing, grate a carrot, chop red pepper, wash spinach leaves carefully and boil three eggs.

5. Coat the meat with mozzarella and ham slices, eggs, carrot, red pepper, and spinach.

6. Cover remaining meat on the top and make sure to seal all the edges.

7. Pour olive oil and remaining breadcrumbs to make a crispy topping.

8. Bake at 425°F for 1 hour. Let rest a few minutes and serve.
